Ham and Cheese Pasta Toss

Ingredients

6 ounces (3/4 cup) uncooked orzo

2 tablespoons sweet-hot mustard

2 tablespoons white wine vinegar

1/4 cup vegetable oil

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon garlic powder

8 ounces lean ham, cut into small strips (2 cups)

1 small jicama, peeled and cut into small strips (a crisp, sweet, turnip-shaped root vegetable)

1 medium carrot, peeled and coarsely shredded

1 small red onion, thinly sliced

4 ounces Gruyere cheese, cut into small strips (1 cup)

Directions

Cook the pasta according to package directions; drain and cool. Combine the mustard and vinegar in small bowl; stir in the oil, pepper flakes, and garlic powder, and set aside.

Combine the pastaa, ham, jicama, carrot, onion, and cheese in a large bowl. Pour dressing over the salad and toss to combine.
