Contributed by Mary Ellen, www.thatsmyhome.com
2 c. self-rising flour
1/2 tsp. baking soda
1/4 c. margarine
1 c. cooked grits
3/4 c. buttermilk (or plain yogurt)
In large mixing bowl, stir together flour and soda. Cut in margarine with pastry blender or fork until mixture resembles coarse crumbs.
In another bowl, beat together grits and buttermilk or yogurt. Pour into flour mixture, stirring just until mixed.
Transfer onto well-floured board and knead lightly. Dough will be sticky.
Roll out dough about 3/4-inch thick with rolling pin or pat out with hands. Cut with 2-inch biscuit cutter and place on ungreased baking sheet.
Bake 10-12 minutes at 450 degrees or until lightly browned.
