RECIPE FROM "SANDY'S
Grilled Onion and Chicken Pita Sandwiches
3 (6-inch) whole pita bread pockets, halved for 6 pockets
3 (4-ounce) chicken breasts, boned, sinned and grilled
1 EACH yellow onion, red onion, and red bell pepper, cut into wedges and grilled
2 tomatoes, sliced to make 12 slices
5 romaine lettuce leaves, torn
3 ounces mozzarela cheese, thinly sliced
1 apple, cored and cut into 6 wedges (garnish)
12 fresh strawberries, hulled (garnish)
Fill each pita half with 1/2 grilled chicken breast.
Divide evenly grilled onions and peppers, tomatoes, lettuce, and cheese into 6 portions.
Fill pockets with veggies and cheese.
Garnish each plate with apple wedges and strawberries.
Makes 6 sandwiches.
