RECIPE FROM "SANDY'S
Golden Onion Dip
2 large sweet onions, chopped
2 tablespoons butter or margarine, melted
1/2 cup chicken broth
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1/2 cup coarsely chopped pistachios, toasted (optional)
Garnish with whole pistachios(optional)
Cook onion in melted butter in a large nonstick skillet over medium-high heat, stirring constantly, until tender.
Add broth; bring to a boil. Cook over medium-high heat 20 to 25 minutes or until onion is golden, stirring often. Remove from heat and let cool completely.
Beat cream cheese at medium speed of an electric mixer until creamy. Add mayonnaise, beating until smooth. Stir in onion mixture and chopped pistachios. Cover and chill.
Garnish, if desired. Serve with assorted fresh veggies or Melba rounds.
Yields about 3 cups
