RECIPE FROM "SANDY'S
Creamy Strawberry Nut Salad

(Excerpted from Gay's note) "......It's so pretty, layered with the sour cream, it serves nicely, and makes such an attractive addition to the buffet table. Tip, drain the crushed pineapple well, and use the juice as part of the 2 C. of water to dissolve the jello....."
2 (3-ounce) packages of strawberry Jell-O
1 cup boiling water*
1 quart frozen strawberries (thawed)
1 (16-ounce) can of crushed pineapple (drained). Reserve juice
3 medium bananas (mashed)
1 cup nuts (chopped)
1 pint sour cream
Dissolve Jell-O in boiling water(*), fold in strawberries. Mix pineapple, nuts and bananas. Add to Jell-O.
Pour half of mixture into a 12 x 8 dish (9 x 13 is fine). Chill till firm. Spread sour cream on top of that.
Gently pour remaining mixture over sour cream layer and chill till firm.
*Gay uses the reserved juice mixed with enough
water to make 1 cup ... then boils it and adds the jello.
