RECIPE FROM "SANDY'S
Fried Chicken Salad
6 to 8 cups torn iceberg or romaine lettuce
2 green onions, sliced
1 large tomato, seeded and chopped
4 strips bacon, crisp-cooked and crumbled
1 cup (4 ounces) shredded Cheddar cheese
1 (10-ounce) package frozen breaded boneless chicken pieces
3 tablespoons honey
1/4 cup Dijon mustard
3 tablespoons white wine vinegar
2/3 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Dash hot pepper sauce
Heat the chicken according to package directions. Let cool slightly.
Place the lettuce in a large serving bowl. Add the onions, tomato, bacon, eggs, and cheese.
Whisk together the honey, mustard, vinegar, oil, salt, pepper, and hot papper sauce in a small bowl. Drizzle dressing over salad. Add chicken and toss to combine. Serve immediately.
