FRIED CHICKEN FINGERS WITH
COME BACK SAUCE

(From Southern Living Magazine Recipes)

 

INGREDIENTS

8 skinned and boned chicken breast halves

2 cups milk

1 tsp. salt

1/2 tsp. lemon pepper

1/2 tsp. black pepper

2 cups flour

Vegetable oil

Garnish: gourmet salad greens (optional)

Come Back Sauce

 

DIRECTIONS

Cut each breast half into 4 strips

Combine strips, milk, and next 3 ingredients in a shallow dih or heavy-duty zip-top plastic bag.

Cover or seal, and chill 4 hours

Remove chicken, discarding marinade; dredge in flour

Pour oil to depth of 2 inches into a large Dutch oven; heat to 350 degrees.

Fry chicken, in batches, 5 to 6 minutes or until golden.

Drain on paper towels.

Garnish, if desired with salad greens

Serve with Come Back Sauce (Recipe below)

YIELD: 16 appetizer servings

 

COME BACK SAUCE

1 cup mayonnaise
1/2 cup olive oil
1/3 chili sauce
1/4 cup ketchup
2 Tbsp. water
4 tsps. Worcestershire sauce
4 tsps. prepared Colman mustard
2 tsp. coarsely ground pepper]1/8 tsp. paprika
1/4 tsp. hot sauce
1 medium onion, minced
2 garlic cloves, minced

DIRECTIONS FOR SAUCE

Stir together all ingredients.

Cover and chill for one hour

YIELD: 3 cups
