RECIPE FROM "SANDY'S
Easy Chicken Stir-Fry
1 onion, cut into wedges
2 tablespoon of cooking oil, divided
1 large red or yellow sweet pepper; chopped
12 ounces chicken breast strips
1/2 cup sweet and sour sauce
14 ounces can green beans, drained
8 oz. can pineapple chunks, drained
Saute onion and peppers in 1 tablespoon cooking oil until tender. Remove from skillet; set aside.
Cook chicken in 1 tablespoon cooking oil. Stir in sweet and sour sauce. Heat to boil. Add cooked peppers and onions, beans and pineapple chunks. Reduce heat, cover and warm through.
Serve over rice.
