8 hard -boiled eggs
3 tablespoons mayonnaise (I use Hellmann's)
1 tablespoon honey mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon horseradish (I use Gold's)
2 tablespoons sweet pickle relish
2 tablespoons sweet pickle juice
1 tablespoon cider vinegar
1 teaspoon sugar
Salt and white pepper, to taste
Paprika, for garnish
Peel the eggs, cut in half and remove the yolks. Place the yolks in a medium-size bowl and mash with a fork.
Add the mayonnaise, mustard, Worcestershire, horseradish, pickle relish, juice, vinegar, sugar, and salt and pepper. Mix until the yolks are smooth. Chill.
Note: I mix the yolk ingredients together the day before so the flavors have time to blend well with one another. Be sure you cover the whites and chill them too. Stuff the cavaties of the whites just before serving, and sprinkle lightly with paprika.
