RECIPE FROM "SANDY'S
Curried Yam Salad
(Adapted from Betty Bliss' Recipes, The Village Voice, Hot Springs, AR)
4 large yams (about 2 pounds)
1 medium red onion(finely chopped)
1 red or green bell pepper (seeded and diced)
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup beef or chicken broth
1 tablespoon curry powder
1/8 teaspoon garlic powder
2 teaspoons brown sugar
Salt and fresh ground pepper to taste
2 tablespoons fresh chopped parsley (for garnish)
Boil the yams until tender and drain. Cool, peel, and cut into 1-inch cubes.
In a large bowl, combine the yams with the onion and bell pepper.
In a small bowl, combine the mayonnaise, sour cream, broth, curry powder, garlic powder, and brown sugar. Pour over yam mixture. Toss lightly.
Season with salt and pepper to taste.
Sprinkle with parsley when serving.
