RECIPE FROM "SANDY'S
Curried Chicken Melts
1 (6-ounce) can of chicken, drained and flaked
3 eggs, hard-boiled, chopped
1/4 cup chopped green onions
1/3 cup mayonnaise
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 slices rye bread
1 cup Monterey Jack cheese, shredded
Combine first 7 ingredients; spread evenly onto 4 bread slices. Sprinkle cheese evenly over tuna mixture, and top each with a bread slice.
Heat a large nonstick skillet over medium heat. Grill sandwiches 2 minutes on each side or until cheese melts and sandwiches are golden.
