RECIPE FROM "SANDY'S
Cucumber, Sweet Onion and Dill Salad
2 large cucumbers, peeled and seeded
Sea salt (to draw out the moisture)
1 large sweet onion, peeled and cut into fine julienne
1/4 cup white wine vinegar
1 cup sour cream (non-fat will work)
1/4 cup chopped fresh dill
2 tablespoons snipped fresh chives
Salt and freshly ground black pepper (to taste)
Tabasco or favorite hot red pepper sauce to taste
In a colander, generously salt the cucumbers with sea salt and allow to draw out the moisture.
Transfer the cucumbers to a bowl of ice water to rinse. Drain well in the colander. Pat dry with paper towels and transfer to a clean bowl.
Add the onion and vinegar and mix well.
Add the sour cream, dill and chives. Season with salt, pepper, and hot sauce. Mix well.
