Company's Comin' Salad


2 medium tomatoes, peeled, seeded, and cubed

1 cup small cubes Monterey Jack cheese

4 slices (about 3 ounces) cooked ham, julienned (long, thin strips)

1 (15 or 16 ounce) can small red beans, drained

2 green onions, sliced

1 small red bell pepper, julienned (long, thin strips)

3 cups shredded lettuce or mixed greens

1/3 cup olive oil

1/4 cup white wine vinegar

1 clove garlic, crushed

1 tablespoon finely chopped fresh cilantro

1/2 teaspoon celery salt

1/8 teaspoon freshly ground black pepper

1 medium to large avacado, peeled


Make layers of the tomatoes, cheese, ham, beans, onions, bell pepper, and lettuce in a 2-1/2 quart salad bowl, starting with tomatoes and ending with lettuce. Cover and refrigerate (up to 3 hours) until ready to serve.


Whisk together the oil, vinegar, garlic, cilantro, celery salt, and black pepper in a small bowl. Pour into glass jar with lid and shake well. Pour the dressing over the layered salad and toss to combine. Serve immediately.

Peel, pit and slice the avacado. garnish the salad with avacado slices.
