RECIPE FROM "SANDY'S
12 ounces boneless skinless chicken breast halves, cut into strips
1 envelope Italian salad dressing
1 cup mushrooms. thinly sliced
1 medium red onion, sliced
1/4 cup olive oil
4 whole submarine rolls, split and toasted
4 slices Swiss cheese
Place chicken in a bowl and sprinkle with salad dressing mix.
In a skillet, saute mushrooms and onion in oil for 3 minutes. Add chicken strips and saute for 7-8 minutes.
Put tops and bottoms of sub buns on a jelly roll sheet and broil 4 inches from heat (with oven door open) until lightly toasted. Note: Watch carefully or they will be charred before you know it ... usually takes only a FEW seconds depending on your oven.
Spoon mixture onto bottoms of sub rolls and top with cheese. Broil 4 inches from heat for 4 minutes or until cheese is melted. Replace tops.
