RECIPE FROM "SANDY'S
Chicken Salad Log
(From Diana Rattray, Southern U.S. Cuisine)
1 pkg. (8 oz.) cream cheese, softened
1/4 c. mayonnaise
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
4 drops red pepper sauce
2 c. finely cut up cooked chicken
2 hard boiled eggs, chopped
1/4 c. sliced green onions (2-3 med.)
3 green pepper rings
1 tbsp. sesame seed
3 tbsp. chopped green onion
3 tbsp. chopped pimento, drained
Crackers & bread rounds
Mix cheese, mayonnaise, lemon juice, salt, ginger, pepper and pepper sauce.
Stir in chicken, eggs and 1/4 cup onions.
Shape into log, 8 x 3 inches, wrap in plastic wrap; refrigerate until firm (4 hours).
Cut green pepper rings to make strips, place strips across log, dividing log into thirds.
Sprinkle sesame seed on 1 section.
Repeat with onions and pimento on remaining sections.
Serve with crackers.
