RECIPE FROM "SANDY'S
Chicken and Fruit Salad
2 boneless chicken breasts
1 tablespoon butter
1 package of salad blend (your preference of variety)
1 large red apple, thinly sliced
1 large green apple, thinly sliced
1/3 cup balsamic vinaigrette
1/2 cup crumbled blue cheese*
1/2 cup walnut halves, toasted
In a medium sized skillet, on medium heat, melt butter and saute chicken breasts until lightly browned on each side, about 13 to 15 minutes. Remove from skillet, drain on paper towels, and set aside to cool.
In a large bowl, toss together the salad blend and the apple slices.
Pour vinaigrette over salad and toss to evenly cover.
Slice cooled chicken breasts in slivers.
Add blue cheese and walnuts and toss gently.
Divide salad mixture over two plates and arrange chicken slivers over salad.
Sandy's Note: Although the recipe calls for blue cheese, I use grated fresh Cheddar because I prefer that flavor.
