Carrot Cake with Cream Cheese Frosting

3/4 cup oil
2 cups sugar
2 cups flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups grated carrots
1 cup crushed pineapple with juice
Mix oil, sugar and eggs together. Beat well.
Add dry ingredients and mix well. Stir in carrots and pineapple with juice.
Butter a 9x13 pan, then cut a piece of parchment paper to line the bottom of the pan.
Pour in cake batter and bake at 350 degrees for 45-50 minutes. Cool pan on rack and turn over onto a cookie sheet that has been lined with doilies or plastic wrap, or both. Peel the parchment paper carefully off the cake bottom.
Cream Cheese Frosting Ingredients
1 pound box confectioners' sugar
1 stick butter
1 tsp. vanilla extract
8 ounces cream cheese softened
Cream Cheese Frosting Directions
Cream together butter and cream cheese.
Add vanilla and sugar gradually until creamy.
