RECIPE FROM "SANDY'S
2 tablespoons snipped fresh basil or 1 teaspoon dried basil, crushed
2 tablespoons snipped fresh mint or 1 teaspoon dried mint, crushed
2 tablespoons olive oil
2 tablespoons rice vinegar or white wine vinegar
2 teaspoons soy sauce
4 cups thinly sliced napa cabbage or savoy cabbage (about one half of a small head
1 mango, peeled, pitted, and sliced, or 2 peaches or nectarines, pitted and sliced)
1 large cucumber, peeled, seeded, and cut into pieces
1 small red sweet pepper, cut into matchstick-size pieces
1/2 small red onion, quartered and thinly sliced
For dressing, combine basil, mint, olive oil, vinegar, and soy sauce in a screw-top jar. Cover and shake. Set aside.
Combine the cabbage; mango, peaches, or nectarines; cucumber; sweet pepper; and red onion in a large bowl.
Add the dressing, gently tossing to combine.
Serves 5 as a side dish
