Broiled Peach Halves
1 (20-ounce) can peach halves, well drained
1 cup brown sugar
1 teaspoon ground ginger
1 teaspoon grated lemon rind
Butter or margarine
Place peach halves in 1-quart baking dish
Combine brown sugar, ginger, and lemon rind, and sprinkle evenly over each peach half, making sure the mixture is concentrated in the center of each peach half.
Add a small dollop of soft butter/margarine to the center of each peach half.
Broil 5 minutes with broiler rack in middle of oven.
Serve hot. Delicious with chicken or pork
