RECIPE FROM "SANDY'S
(From Cooking of the American South)
1 (4 pound) duck
1/2 cup lemon juice
1/2 cup brandy
1/2 cup real butter, melted
1/4 cup chopped parsley
1 teaspoon paprika
Preheat the oven to 375 degrees.
Wash, rinse and dry the duck. Rub entire body with lemon juice.
Place the duck in a roasting pan and baste with a mixture of the brandy, butter and parsley.
Sprikle with paprika and bake for 1-1/2 hours, basing with the sauce every 15 minutes.
