RECIPE FROM "SANDY'S
Aunt Esther's Cherry Salad
(Before my aunt passed away, she gave me all her recipes, and this was one of my favorites she always fixed when we visited her in the summer).
1 (20-ounce) can crushed pineapple
1 (16-ounce) can dark sweet pitted cherries
1 (6-ounce) box black cherry flavored gelatin
1 (12-ounce) can of Coca-Cola (that has not been opened, so the carbonation is good)
1 (8-ounce) package of cream cheese
1 cup chopped pecans
Drain pineapple and cherries, saving the juice of both.
Add eouch water to the combined fruit juices to make 2 cups liquid.
Heat the fruit juice until hot enough to dissolve gelatin. Pour the juice over the gelatin in a large bowl and stir until dissolved. Cool
Chill until the mixture is consistency of syrup--but don't let it get too firm. Now, add fruit, nuts, and stir.
Cut cheese into small cubes and stir it into the mixture.
Transfer mixture into an 8 x 12 inch oblong dish, or any serving bowl or container you wish to serve it in.
