2 1/4 teaspoons active dry yeast

1/4 cup warm water

1 cup all-purpose flour

1 cup white sugar

1 cup warm milk

Add warm water and yeast in a small bowl, stir well
and let sit for 10 minutes.

In a large glass or plastic bowl combine flour and sugar.
Pour in warm milk and dissolved yeast mixture. Cover
loosely and let stand at room temperature. Mixture will
become bubbly.

This is day 1 of the cycle.

Every day stir mixture with a wooden spoon.

On day 5 and day 10 add:

1 cup flour
1 cup sugar
1 cup milk
On day 10 remove one cup of mixture and set aside for
your bread recipe. Give one cup to friends with recipe
for feeding and baking with starter. Begin the 10 day
cycle over again with the remaining 1 cup starter.
