RECIPE FROM "SANDY'S
8 medium navel oranges
2 bananas, sliced
1 tablespoon lemon juice
3/4 cup orange juice
1 (8-ounce) can crushed pineapple, drained
1/2 cup flaked coconut (optional)
1 cup whipping cream
2 tablespoons powdered sugar
1 cup pecan halves, toasted
Peel and section oranges over a bowl, reserving any juice.
Toss together banana and lemon juice and add to orange mixture.
Stir together orange mixture, juice, bananas, pineapple, and optional coconut. Cover and chill 2 hours.
Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form.
Spoon fruit mixture into individual dishes; top each serving with whipped cream, pecans, and a cherry.
YIELD 4 to 6 servings
