Gouda Cheese and Apple Soup


3 tablespoons butter

2 medium apples, peeled, cored, and cut into thin slices

1 shallot, minced

1 tablespon flour

1/4 teaspoon curry powder

1/4 teaspoon ground cinnamon

2 cups half-and-half or milk (or combo of the 2)

1 cup shredded Gouda Cheese

1 small apple, cored, with peel on (optional).

Mint sprigs (optional)



Melt butter in large saucepan over low heat. Add apples. Saute for 5 minutes or until golden, stirring occasionally. Set aside half the apples and reserve.

Add shallot to saucepan. Saute 1 minute. Stir in flour, curry powder, and cinnamon, and mix well. Gradually add half-and-half, stirring constantly to thicken. Add cheese, stirring until it melts.

Pour soup into blender and puree. Return to saucepan and heat thoroughly. Add salt and pepper to taste. Pour into bowls and top each bowl with a thin slice of unpeeled apple.

For garnish, thinly slice extra cored apple (with peel on) and put one slice on each bowl of soup. Also lay a fresh sprig of mint beside apple slice before serving.

Note: This makes a great presentation for a summer lunch, and combines well with a chicken salad sandwich.
